Relaying is common for larger Radio Stations & Broadcasters, whereas Stream Hosting might be effective for hobbyists and new Stations.
If we're Hosting your SHOUTcast Stream, then you're uploading files to our systems, and you're then (programming) defining playlists for the Stream.
Media Control Panel allows you to take song requests, broadcast metadata about the "Now playing" track, and otherwise manage/cast your Station with ease.
If we're Relaying your SHOUTcast Stream, then everything to do with composing your Stream, assembling your tracks and vocals, and Streaming is at your end.
You then specify the hostname of our Radio System to receive a Stream from your broadcast location, and we then relay that out to your listeners online.
Usually larger Stations will start off Streaming through their internet connection, and at a point their internet stops functioning quite so reliably!
At that point, we take over the work of managing those multiple concurrent streams/listeners, so you can get back to focusing on the Station.
